Dovecot serves IMAP and POP3 and handles local mail delivery; the companion to Postfix and the same stack Apple Server's Mail service used. Install with Homebrew (brew install dovecot) or a Linux package; carry over the mailbox format (Maildir) and TLS certs, and connect any mail client. Works with the Mail Security tools here.
