Tesseract is the long-standing open-source OCR engine (Google-maintained for years, HP before that): point it at an image and get text; tesseract scan.png out writes out.txt, -l jpn picks a language, pdf as a config produces a searchable PDF. Install with Homebrew (brew install tesseract); add tesseract-lang for the full 100+ language pack (Japanese, Chinese, Korean and more). Runs entirely locally; nothing is uploaded; and pairs naturally with scripts: batch-OCR a folder of scans, feed receipts to an automation, or give the AI Administrator readable text from screenshots.
