Postfix is the SMTP server Apple Server used under the hood, so migrating its main.cf/master.cf is largely a copy (FrontierStack's mail importer reads /Library/Server/Mail/Config). Install with Homebrew (brew install postfix) or a Linux package, pair it with Dovecot for IMAP/POP, and harden it with the Mail Security tools (SPF/DKIM/DMARC, open-relay test).
