GitLab CI/CD runs pipelines defined in .gitlab-ci.yml, with environments and deployments. It is a feature of GitLab itself, not a separate install, so it comes with every way of running GitLab — GitLab.com, GitLab Dedicated, or a self-managed instance from the Linux package, Docker, Helm/Operator or the Environment Toolkit (see the GitLab entry in Version Control). What you do install is the job host: GitLab Runner, which has its own entry in this category and runs on this Mac via Homebrew. GitLab.com also offers hosted runners (including macOS runners) if you would rather not host one. Automate and monitor pipelines, jobs and deployments with the GitLab API or the glab CLI (brew install glab).
